Cookies + Brownies

= The perfect bite!

Maybe they should even be called “Cow Cookies”! This is perfect for a party or just a friendly gathering.

For me, this truly is the best of two of the dessert worlds coming together! Chocolate chip cookie meets rich, chewy brownie . . . their union is a harmonious one! The only thing that could possibly make these better would be ICE CREAM!!! My personal favorite is coffee ice cream scooped on top just as it comes hot out of the oven!!!!! I imagine that Blue Bell’s homestyle vanilla would be pretty spectacular too though. Too bad for me there was no ice cream sold on the island in winter a few weeks back when I made these. I would have loved taking pictures with different ice cream flavors on each slice! Which flavor floats your boat?


Mix anything with cinnamon and I am a fool for it, but especially in snickerdoodles! My snickerdoodles are made with whole wheat flour and a dash of lemon zest, they always turn out extremely light too. Give this recipe a try next time you want a delight to bite. Corny I know, but how could I resist such a clever endeavor. 

Apparently, snickerdoodles are of German origin and it was a first time for each Greek friend that I shared the new cookie with. Everyone here was amazed how soft and chewy the “cookie” was  because when you say cookie in Greece, they assume you mean “biscuit” which is always a hard, crunchy, British-style cookie that I have never been fond of eating — even with tea.

Snickerdoodle Cookie Recipe:   Makes 2 – 2 1/2 dozen cookies
1 1/2 cups AP flour
1 1/4 cups whole wheat flour
2 tsp. baking powder
1/2 tsp. salt
1 cup butter, room temp

1 – 1 1/2 cups sugar, white or raw sugar
2 eggs, large and lightly beaten
2 tsp. vanilla
1 tsp. cinnamon
1 tsp. fresh lemon zest
cinnamon and sugar mixed to roll cookie balls

These are one of two traditional Christmas sweets made all over Greece. They are a simple, delicious syrup cookie made with fresh juice, zest, and cinnamon and spices. Once baked they are crunchy, but after a light syrup bath and topped with nuts, they are transformed into a decadent Greek sweet.

These are definitely not of Greek decent, it is actually very difficult to even find peanut butter here on the island. When we have it, but it is only a 5 oz. jar for an equivalent of about $6.50. Hardly worth it, but sometimes I get little packages from the homeland that included wonderful treats such as chocolate chips and oversized jars of peanut butter! Hooray for family and friends who love me.
