These are definitely not of Greek decent, it is actually very difficult to even find peanut butter here on the island. When we have it, but it is only a 5 oz. jar for an equivalent of about $6.50. Hardly worth it, but sometimes I get little packages from the homeland that included wonderful treats such as chocolate chips and oversized jars of peanut butter! Hooray for family and friends who love me.
These are great by themselves or with a handful or two of chocolate chips. I originally made these thinking V would have thought he had died and gone to Heaven, but to my surprise he likes my plain Chocolate Chip Cookies better. So, it ended up being me, the one who loved peanut butter on bananas but never really in cookies, who ate most of them. I did share of course with other people, you don’t think I would actually eat an entire batch of cookies alone do you?! (Don’t answer that).
Peanut Butter Cookies with Chocolate Chips
1 cup peanut butter (the least processed brand) 1 cup butter, 225 g., softened 1 cup white sugar 1 cup brown sugar 2 eggs, room temperature 1 tsp. vanilla 2 1/2 cups flour (I always sub 1 cup whole wheat) 1 tsp. baking powder 1 1/2 tsp. baking soda 1/2 tsp. salt Dash of cinnamon
Cream butter and sugar until light and fluffy, add peanut butter and mix until creamy, then add eggs one at a time. Stir in vanilla and cinnamon. Sift dry ingredients and add to batter slowly. Stir in chocolate chips (if using) and refrigerate for 1 hour. Before removing the batter from fridge, preheat oven to 375° and prepare cookie sheets. Roll into 1″ balls and flatten with back of fork in a criss-cross pattern.
Bake for 9-10 minutes or until golden, but do not over bake!!! Cool on wire rack, serve warm with cold milk, and enjoy with anyone who has a hankering for some peanut butter, you’ll be their new best friend.
